Back during the British East Trading Company days, coffee and spices from India were transported in large wooden ships around the Cape of Good Hope. The journey took months and the coffee was exposed to moist air and winds that changed the coffee's characteristics. The coffee became pale gold in color, swelled in size, lost acidity, and took on an earthy mellow flavor. Europeans loved this coffee and became addicted to its flavor. After the Suez Canal opened, the shipping time became very short and the coffee was no longer aged for months in the moist marine environment, causing the coffee to lose popularity because it looked and tasted different. To recreate the loved coffee, the coffee beans are now shipped to the Malabar Coast of India and aged in open warehouses. Jute bags full of unroasted Indian coffee beans are exposed to monsoon conditions for 12-16 weeks while being carefully monitored and rotated in order to create this specialty coffee.
